Espresso

The Sanremo Opera 2.0 is a competition-level espresso machine — the same platform used on world championship stages. Our baristas rely on its exceptional temperature stability and precise pressure control to extract every espresso-based drink on our menu.

Why it matters in your cup: consistency. Shot after shot, the Opera holds the exact brewing conditions each coffee needs, so the espresso in your flat white at 8 a.m. tastes just as sweet and balanced as the one pulled at closing time.

Grinding

Mahlkönig E80 Supreme GBW

A great machine is only as good as the grinder feeding it. The Mahlkönig E80 Supreme GBW pairs 80 mm burrs with grind-by-weight technology, dosing each shot to the tenth of a gram — no guesswork, no wasted coffee.

Why we use it: precision and clarity. Uniform particle size means even extraction, and even extraction is what separates a sweet, complex espresso from a bitter one. The grind-by-weight system keeps every dose identical, so our recipes stay dialled in all day.

Manual Brewing

The Pour-Over Bar

Espresso shows a coffee’s intensity; pour-over shows its personality. Our manual brew bar is where single origins get room to speak, one hand-brewed cup at a time.

Hario V60

The V60’s cone shape, spiral ribs, and single large opening give our baristas total control over flow rate. We reach for it when a coffee deserves a clean, bright, tea-like cup that highlights delicate florals and acidity.

Origami Dripper

Beautiful and versatile, the Origami accepts both conical and flat-bottom filters, letting us change the brew style to suit the bean. Its ribbed ceramic body manages heat gracefully — and it looks stunning on the bar while it works.
